Chicken Festive

Prepare this chicken dish and turn any meal into a memorable one. Great for Sunday lunches with the family.

3/4 cupbutter or margarine(for white sauce)
1/4 cupAll-Purpose Flour(for white sauce)
3/4 cupWater(for white sauce)
1/2 cupOnion(chopped, for white sauce)
1 1/8 cupsAll-Purpose Cream(for white sauce)
2 1/4 kgChicken Meat(breast and thigh, cut into serving portions)
1/2 tspSalt 
1/2 tspBlack Pepper 
3 tbspGarlic(crushed)
1 1/2 cupButton Mushrooms(canned, sliced)
1 cupRed Bell Pepper(cut into cubes)
1 cupGreen Bell Pepper(cut into cubes)
1/2 cupGreen Pitted Olives(pitted and sliced crosswise)
to taste Salt 
1/2 cupParsley(fresh chopped, optional)
1 pouch (560 grams)Del Monte
Italian Style Spaghetti Sauce

Cooking Procedure:

  1. SAUCE:

    Heat half of butter. Add flour. Cook over low heat while stirring until light brown. Gradually add water, stirring until smooth. Add onion and all purpose cream. Blend well. Set aside. 

  2. Season chicken with salt and pepper. Saute garlic and mushrooms in remaining butter. Add chicken. Cook until slightly browned. 

  3. Add bell peppers, olives, DEL MONTE Italian Style Spaghetti Sauce and salt to taste. Bring to boil and simmer for 20 minutes. Add white sauce. Stir once. Sprinkle with parsley.

    Makes 24 servings
