Tortang Hipon at Piña

100 gramsShrimps(shelled and diced)
2 pcSiling Haba(seeded and diced)
4 pcEgg(beaten)
½ tspIodized Fine Salt 
½ tspBlack Pepper 
¼ cupAll-Purpose Flour 
1/3 cupCooking Oil 
2 pouches (115 grams each)Del Monte
Pineapple Tidbits

Cooking Procedure:

  1. broil / grill / boil the eggplants until cooked. peel and discard stem then chop flesh.

  2. In a bowl, combine eggplant flesh, shrimps, sili, DEL MONTE Pineapple Tidbits, eggs, flour, salt and pepper. Mix well.

  3. Heat oil. Fry every ¼ cup of mixture until cooked on both sides. Serve with DEL MONTE Ketchup.

    Makes 8 servings
