Tortang Hipon at Piña (Pineapple and Shrimp Omelet)

100 gShrimps(shelled and diced)
2 pcsSili Pansigang(seeded and diced)
4 pcEgg(beaten)
½ tspIodized Fine Salt 
½ tspBlack Pepper 
3 tbspsAll-Purpose Flour 
5 tbspsCooking Oil 
2 pouches (115 grams each)Del Monte
Pineapple Tidbits

Cooking Procedure:

  1. Broil or grill the eggplants until cooked. Peel and discard stem then chop flesh.

  2. In a bowl, combine eggplant, shrimp, sili, DEL MONTE Pineapple Tidbits, eggs, flour, salt and pepper. Mix well.

  3. Heat oil. Fry mixture in 1/4 cup batches until cooked on both sides. Serve with DEL MONTE Ketchup.
