Tortang Hipon at Piña (Pineapple and Shrimp Omelet)
Make your torta dish more special with shrimps and sweet pineapple.

|100 g||Shrimps||(shelled and diced)|
|2 pcs||Sili Pansigang||(seeded and diced)|
|½ tsp||Iodized Fine Salt|| |
|½ tsp||Black Pepper|| |
|3 tbsps||All-Purpose Flour|| |
|5 tbsps||Cooking Oil|| |
|2 pouches (115 grams each)||Del Monte|
Broil or grill the eggplants until cooked. Peel and discard stem then chop flesh.
In a bowl, combine eggplant, shrimp, sili, DEL MONTE Pineapple Tidbits, eggs, flour, salt and pepper. Mix well.
Heat oil. Fry mixture in 1/4 cup batches until cooked on both sides. Serve with DEL MONTE Ketchup.
